Tasting Notes: Matured in American white oak bourbon casks and then aged in Oloroso casks this whiskey exudes flavour and complexity well beyond its 12 years. Dalmore 12 is aged for 9 years in American white oak ex-bourbon casks, then in ex-oloroso sherry casks for the final three years. they believe the combination of different stills, of various sizes, produce a stronger and more complex character. Initially aged for 9 years in ex-bourbon casks, this single malt whisky then embarks on a distinctive journey.The sherry really comes on the scene when you taste the whisky with cinnamon, dried fruits, and bitter chocolate while the finish is pleasant and of decent length. Upon nosing, delightful aromas of citrus fruit dance alongside the allure of chocolate, complemented by fragrant hints of aromatic spices. The finish is as long as your arm, with spice, ginger, lingering Seville oranges and even a suggestion of vanilla.

Matured for an initial nine years in American white oak, ex-bourbon casks before being carefully divided. With water to open it up a tad, it became more savoury for me, with no smokiness, but more unburnt charcoal.
