I have often been asked how to boil a soft-boiled egg like we do at the restaurant as an additional topping for our laksa. I have never frozen it myself but I don't see any ingredient in paste that can be issue in freezing.

This fragrant paste from Yeo’s is made with coconut, lemongrass, chilli and ginger for the distinctive Singaporean version of laksa curry. Frying the paste is an important step if you’re not to end up with a raw-tasting gravy; Yin recommends half an hour of patient stirring until it’s really dark, but it dries out under my inexpert care – half that time seems to yield a pretty decent result. The broth should taste rich and deep, and slightly salty (the noodles will mellow the salt out) and just a little limey. You can substitute Cayenne pepper, Chile de Arbol, and Guajillo chiles (which will result in less heat.Add your choice of protein to the flavorful coconut broth, then ladle it over fresh rice noodles, top with a handful of crunchy bean sprouts, fresh cilantro, and mint, and serve with lime wedges. I followed the recipe to the letter except I used laksa leaves (AKA Vietnamese mint) inst ead of coriander as a garnish. Even though, I’m still about a month away from having the braces put on, today’s recipe happens to be a soup. Prepare cooked yellow noodles and beansprouts in a bowl and add in slices of meat, fish cakes, hard-boiled egg and mint leaves. Blend a batch of laksa paste in advance, then make vegetarian laksa soup for dinner in just 10 minutes. If you can find them, laksa leaves (ask for rau ram or hot mint in Vietnamese supermarkets) add a distinctive fragrance to the dish and take me back to my childhood.

I pregrind it in my spice grinder and keep it in a sealed jar as it’s a perfect, rich in iodine, seasoning to sprinkle on rice / sushi and it makes an excellent replacement for the fishy umami flavour that so many South-East Asian dishes feature. Extra protein, such as Tan’s cockles or Lee’s chicken and her spicy pork sauce, is also a possibility; a boiled egg, of course, would be the simplest option. I added thinly sliced Tofu Puffs to my bowl along with the other recommended ingredients plus cilantro (I opted out of the prawns and cucumbers and laksa leaves). If you’re after health food, a fishy assam laksa is probably a better bet, and seasoned according to whim: Yin, Musa and Tan all add sugar as well as salt and pepper, but taste it and see what works for you.

Fine rice vermicelli noodles soak up the thick soup and is topped with shredded chicken, egg, shrimp, cucumbers and bean sprouts. I drive a 2 hour round trip for a bowl of Laksa that takes 15 minutes to consume and I’m booted out of my seat the minute I finish slurping the soup.Add all the homemade Laksa Paste (or the 7-ounce Jar), and saute, stirring constantly until it becomes very fragrant and deep in color about 2-3 minutes. Chinese men, also known as "Babas" would set out onto the spice trade route and settle in their new villages, marrying the local Malay women. Measure in the lime juice, fish sauce and sugar, and stir through, then taste and adjust ( see note above) Add the beans and tofu puffs (if using), cooking just long enough to heat them through, a minute at the most. Or if you want to make the laksa paste from scratch – it’s actually not that hard and has no preservatives or msg. Do not boil this too long or you will lose the lovely sweetness from the coconut milk- just gently warm.
